BOOK REVIEW: Souping is the New Juicing by Cherie Calbom, MS

When my mom knows I am feeling under the weather, she expects that I will ask her to whip up some homemade chicken noodle soup to ease my sniffles and congestion. As the weather gets colder, I love to experiment with new soup ideas using my slow cooker and pressure cooker. I was eager to review Souping is the New Juicing by Cherie Calbom since I am mostly dairy and gluten free. I have tried juicing and wound up selling my juicer for $25 at a garage sale. I didn’t care for the blueberry stained ceiling. And, who has the time to clean everything? Not me – so souping seems like a more efficient option.

I read Souping is the New Juicing in two days. It’s a very easy, informative read.

Souping is the New Juicing begins with Cherie’s story. I really enjoyed learning about the authors experience that lead her to live a healthier lifestyle. Sometimes it takes tragedy and hardship to change our habits, routines, and roles and ultimately prevail

Living Foods was one of my favorite chapters where Cherie breaks down important components of soups (i.e. asparagus, watercress, cilantro) and explains why they are important. I like to know why foods are good for me to eat, and I learned that rosemary, one of my favorite herbs, has the ability to improve mood, increases intelligence, boosts memory, and relives pain (Souping is the New Juicing, p 55).

Souping is the New Juicing then educates us how to detox with soup. You take quizzes throughout this chapter, discovering if you have a build up of toxicity, and/or if you are in need of a colon, kidney, liver, or lymphatic cleanse. This section is very thorough!

Cherie has a chapter on soups for weight loss. Cherie taught me that mushrooms, legumes, watercress, almonds and coconut oil are great for weight loss. (Souping is the New Juicing, 117-118). I haven’t tried watercress, but am going to put that on my shopping list for my next soup adventure.

I appreciate all of the research that Cherie has put into Souping is the New Juicing. She has many studies and sources listed, which helps me to understand why souping works!

The last chapter of the book is dedicated to recipes. Categories of soup recipes include:

  • raw blender
  • gently warmed
  • creamy
  • vegetable
  • healing
  • detox
  • soups with legumes
  • soups with muscle meat

I appreciate that all of the recipes are gluten, dairy, and sugar free.

Although it’s ideal to cook soup in a stock pot on the stove, most of the recipes in this book can be prepared in my Blend-Tec, pressure cooker or slow cooker. I also recommend a good immersion blender.

I experimented – not quite following the recipes in the book, but including ingredients that Cherie mentioned in the third chapter. (The right picture, below contains chicken broth, water, spinach, leeks, sweet potatoes, jalapenos, and onions that I threw together in my pressure cooker. The left picture contains vegetable broth, sweet potatoes, leeks, and spinach that was the result of 8 hours in the slow cooker.)

Soups certainly warms my soul, and they definitely make me feel good about myself. I know that I am giving my body what it deserves – nutrients, vitamins, minerals, enzymes…and the list continues… Souping is the New Juicing by Cherie Calbom

Souping is the New Juicing is a terrific reference and a constant go-to on my cookbook shelf. I would recommend Souping is the New Juicing to anyone looking to incorporate healthy soups into their diet.

My Thoughts

Holy stickiness! After you unwrap the chewy bite from the package, you feel the maple brown rice syrup on your hands. And, unfortunately, you better have a wet napkin or hand sanitizer available or you will be left with sticky fingers. Note to self: hold the chew by the wrapper to protect my hands and clothing! 

Setton Farms Pistachio Chewy Bites

The chew is delicious. I love the crunch of the pistachio with the sweetness of the blueberries, cranberries, coconut and maple brown rice syrup. It’s chewy, gooey, and in a few small bites, they are gone! Bummer. I want more! 

As for health conscious, I am glad the Setton Farms 100% All Natural Pistachio Chewy Bites are dairy and gluten free. A serving size is 2 chews, which is 200 calories. For me, that is a pretty heavy snack so I would stick with one chew. I like how the chews contain potassium, protein, fiber, and iron. I sometimes don’t get enough minerals, and this is a great way to get a healthy amount of nuts and fruit into my diet.

As for each chew being individually wrapped, I hope that Setton Farms will consider putting the chews into a biodegradable wrapper to cut back on waste. I also think that the bag is rather large for six small chews; perhaps they could add more chews or cut back on some of the packaging.

The Setton Farms 100% All Natural Pistachio Chewy Bites work wonderfully when I am on the go – or if I come home from work feeling ravenous and need something to hold me over until dinner.

What I Sampled

  • Broccoli Cinnamon Pork
    • Thoughts: Delicious. I love the combo – pulled pork is tender, the broccoli and squash are cooked perfectly, and you definitely taste the cinnamon. This was the easiest pulled pork and vegetable recipe I have ever made, and certainly tasted the best! 
  • Tuscan Chicken Pomodoro
    • Thoughts: Take me to Tuscany! I love the balsamic vinegar flavor throughout. There was a little excess water after 12 minutes, but it didn’t impact the dish. The chicken was soft and tender, and the tomatoes and onions were covered in the delicious herbs and spices. This was super yummy; my Nonna would be proud!

Thoughts

Elements are super simple to make and absolutely delicious! I love eating clean, and in 12 minutes I have a hot, delicious meal that fuels my body for or after a long run. I never would have imagined freeze dried food would taste so good!

Spicy Sambal Shrimp with Mango Salad

People assume because I cook for a living that I whip-up elaborate, gourmet meals every night. After food styling, being in front of the camera cooking, or writing recipes all day, the thought of spending hours in the kitchen to knock together the evening meal holds little appeal, no matter how much I love to cook. Meals that are fresh and fast are where it’s at during the weeknight grind. Salads and stir-fries are both perfect speedy, wholesome meals for the time challenged and are my savior for when I’m short on time, energy or inspiration (and sometimes all three).

Keeping a well-stocked pantry is key, so I tend to have a selection of vinegars, nuts, oils and Asian sauces at the ready. Buying meat and seafood in bulk, portioning them and throwing them into the freezer to have on hand means all that’s left to pick up from the store is a few fresh ingredients.

If you have any energy left at the end of your day, doing 15 minutes prep for the following night’s meal will have you feeling like a kitchen maven.  Here are a couple of quick recipes:  an Asian inspired shrimp and mango salad and a ginger spritzer to wash it down, both with lots of make-ahead elements, so you can have dinner on the table with a minimum of fuss maybe leaving a little time left for you at the end of your long day (it helps to dream, right?!).

Spicy Sambal Shrimp with Mango Salad

MARINADE

  • 1/4 cup sambal oelek (Asian chili paste)
  • 2 large garlic cloves, minced
  • 2 tablespoons honey
  • 1 tablespoon fish sauce, optional
  • 1 tablespoon minced peeled ginger
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 20 large, raw shrimp (prawns), peeled and deveined leaving tails intact
  • 4 to 5 metal (or bamboo) skewers

SALAD

  • 2 tablespoons rice vinegar
  • 2 tablespoons canola oil
  • 1 large, ripe mango, peeled and sliced
  • 1/2 English cucumber, thinly sliced
  • 1/2 small red onion, cut into thin wedges
  • 6 to 8 small radish, halved or sliced
  • 1/2 cup mint leaves
  • 1/4 cup cilantro (coriander) leaves
  • 1/3 cup chopped roasted peanuts

To make the marinade: Combine sambal, garlic, honey, fish sauce, ginger, soy and sesame oil in a small bowl. Pour 1/2 of the mixture into a blender (this will become the dressing for the salad). Add shrimp to the remaining mixture in the bowl; mix well to coat. Thread shrimp onto skewers. Cover and set aside in the fridge.

To make the dressing for the salad: Add vinegar and canola oil to sambal mixture in blender; blend until smooth.  Cover and set aside in the fridge.

Just before serving: Toss mango, cucumber, onion, radish, mint & cilantro together in a medium bowl. Drizzle with salad; toss to combine. Sprinkle with peanuts.

Cook shrimp on greased grill of a hot barbeque, 2 to 3 minutes each side until they turn pink – do not overcook.  Serve shrimp with mango salad. Serves 3 to 4.

Note: As an alternate, you could marinate and grill the shrimp the night before & toss them into the salad, cold, just before serving.

Ginger Cucumber Spritzers

  • 1 cup water
  • 1/2 cup granulated sugar
  • 3-inch piece ginger (it doesn’t have to be peeled), sliced
  • 2 rosemary sprigs
  • 1/2 English cucumber, sliced
  • ice
  • sparkling water or club soda to serve

Combine water, sugar, ginger & rosemary in a small saucepan. Stir over medium heat until sugar is dissolved. Simmer, uncovered, without stirring, for 5 minutes; strain into a small pitcher or jar. Cover and chill until read to use.

Place cucumber slices and ice into a serving jug or individual glasses. Top with sparkling water; stir to combine. Serve immediately. Serves 3 to 4.

I wish everyone a happy & healthy 2017.

My thoughts for this year: Open your mind. Embrace change. 2017 is a clean slate. Today is Day 1 of 365. Be productive. Adopt a dog. Volunteer your time. Donate your pennies, or millions. Take a chance. Fear is a useless emotion. Believe in yourself, and humanity. It will be okay. Read something interesting and write something powerful. Share your story. People want to hear you. Support an organization that challenges and fulfills you. Don’t stop believing in yourself. Laugh until your belly hurts. Smile. Get outside. Enjoy the fresh air. Take a deep breath. Life is good.
